Named after the Via Aurelia, Aurelia's contemporary Mediterranean cuisine follows the same path, and pays homage to the gastronomy of the same geographical areas that the old Roman road embraced centuries ago.
Construction of the Via Aurelia started around 241 BC by C. Aurelius Cotta with the purpose of mobilizing the Roman army as well as increasing trade with other cities of the empire. At its outset, Via Aurelia linked Rome with Ansedonia on the Mediterranean coast and then proceeded on to Pisa. As it expanded to cover more territories, it went along the Ligurian coast to reach Genoa, then on to what is now France, passing through Nice, Aix-en-Provence, Arles, Marseille, and then present Spain via Barcelona, going as far as Santiago de Compostela. As the main road became well-travelled, it joined others and crisscrossed northern Spain, eventually reaching the Atlantic coast near Santander. Thus, as Aurelia's cuisine, the old Roman road covered all of the Mediterranean.
Aurelia's cuisine focuses exclusively on the freshest and finest quality raw ingredients, respecting their seasons and their integrity, treating them with honesty and care. Aurelia's sharing concept of serving food as it is prepared and ready brings to the table the same spirit of Mediterranean unity as Via Aurelia did, thus truly establishing and combining the very best of Italian, French and Spanish contemporary cuisines.
